BEEF STOCK

Ingredients

90 ml tomato paste
6.5 liter water
3.5 kg beef bones
beef trim
1 clove garlic
7 sprig parsley
1 each bay leaves
3 ml pepper, whole black
3 ml thyme leaves
1 each large onion
1/2 stalk celery
1/2 each carrot

Directions

ROAST bones for 45 minutes at 375F

COARSE CHOP onions, carrot and celery and add to bones.  Roast 45 minutes more.

BRUSH bones and vegetables with tomato paste and roast 5 minutes more

COMBINE all ingredients in a stock pot and cover with cold water

SLOWLY bring to a simmer, skimming the scum from the surface.  Simmer 6 to 8 hours.  Do not boil.

STRAIN and cool in ice bath.  Label and store until needed.
