Time: 4 to 5 hours
Skill: Intermediate
Yield: 10 to 15 portions

All Purpose Seasoning

1 cup Paprika
1/4 cup Chili Powder
1/2 cup Salt
1 tbsp Black Pepper
1 tbsp Garlic Powder
1 tbsp Mustard, Dry
2 tbsp Basil, Dry
2 tbsp Oregano, Dry
2 tbsp Thyme, Dry Leaves

THAW the turkey in the fridge for two to three days prior to cooking.

PLACE it in a roasting pan with 2 cups of water and top with your favorite seasonings.

COVER with foil and place in a 300 degree oven for 3 to 4 hours.

UNCOVER and brown for 30-45 minutes in the oven.

NOTE: Cooking times will vary depending on the size of the turkey.  The best way to ensure that any turkey is fully cooked is to use a thermometer to ensure the internal temperature of the turkey reaches 180 degrees Fahrenheit.  Cook your turkey to 165-170 degrees and remove it from the oven, let it rest for 10-15 minutes before slicing.  The internal temperature will rise 10-15 degrees as it sits and you’ll find that your turkey will be more tender and juicy.

BLEND all ingredients well.

STORE in a labeled container.

NOTE: This rub works great on pork, beef and chicken.  It works well on roasted potatoes.  Try adding it to your tomato sauce for some added flavor.
